Cowboy Caviar
Cowboy caviar recipes went viral this summer and for good reason. Here is my version. It is a quick summer dish that is seriously good eaten with tortilla crisps or as a salad. I think it would be a good addition to any summer BBQ…..yum.
You really are eating the rainbow with this recipe, hitting big points for diversity and getting in an abundance of phytonutrients. It is a great dish for gut health with the addition of a variety of beans and high-fibre plant foods like corn.
Ingredients
1 red onion
1 red pepper
1 yellow pepper
1 avocado
1 pack of cherry tomatoes
1 can of sweetcorn
1 can of mixed beans
large bunch of fresh coriander, roughly chopped
olive oil
juice of 1 lime
salt and pepper
Method
Chop your onion, peppers, tomatoes and avocado into small chunks. Drain and rinse your beans and sweetcorn. Mix all your ingredients together in a large bowl. Drizzle over a generous amount of olive oil (opt for extra virgin) and add your lime juice. Sprinkle over your chopped coriander reserving a little for a garnish, and season to taste. Top with your remaining coriander and enjoy!
I love eating these with tortilla crisps or in a wrap. Leftovers make a great lunchbox lunch for on the go.
