Blender Pancake

Blender pancake recipe
 
 
 

I make these pancakes almost every week for Atti and I for breakfast. If any are left over you can take them on the go as a snack. They are a great finger food and so soft they are sure to be a hit with your baby or toddler. Recipe is enough for mum and baby.

Ingredients

1 tbsp oats

1 tbsp unsweetened desiccated coconut

1 banana

1 egg

½ teaspoon of baking powder

Handful of raspberries or blueberries

Method

Place all ingredients in the blender and blitz until smooth. In a pan on a medium heat melt a knob of unsalted butter. Pour a small of pancake mix into the pan and cook each pancake a few minutes each side until golden brown and cooked through.

You can either drop in the berries to the pancakes whilst cooking or serve on the side with yoghurt.
